祇園祭には、色々な別名があり屏風祭とも鱧祭とも呼ばれます。
昨日は、素敵な屏風をご紹介したので、今日は鱧料理をご紹介します☆
宵山の日の夕飯は毎年、プーさん店長さんの子供のころから知り合いのご飯屋さんへ、お客様をご案内しています。
そこでは、毎年たっぷり鱧尽くしのコースを美味しく頂いています。今回は頭以外すべて頂いたといってもいいぐらい色々な部位を、それぞれに合った調理で美味しく頂きました。とっても手間がかかるので、美味しくてもなかなか一般的には出てくることのない肝や浮き袋、たまご、白子も美味しい日本酒と楽しいお話でおなかの中に入っちゃいました♪

Speaking of summer in Kyoto, it is Gion festival. We hold a guided tour of the Gion festival every year.
Gion festival has other names and it is also known as Byobu (folding screen) festival or Hamo (dagger tooth pike conger) festival.
I am going to introduce a part of dagger tooth pike conger’s course of dinner that we had with our customers at Gion festival’s eve. In general, boiled dish, sushi and soup are served, but this restaurant also served milt and air bladder that parts you don’t usually get to eat since it takes time for food preparation. It was served every part of dagger tooth pike conger except its head.
